Job Summary

We are looking for a passionate and experienced Head of Baker to lead our bakery operations, oversee product quality, manage production teams, and drive innovation in breads, viennoiserie, and baked goods. The ideal candidate must have strong leadership skills, excellent baking knowledge, and the ability to maintain consistency across production and retail outlets.

Key Responsibilities

Bakery Operations

  • Oversee daily bakery production and ensure smooth kitchen operations.
  • Manage production planning according to outlet requirements and forecast.
  • Ensure consistency, quality, presentation, and taste of all bakery products.
  • Monitor baking schedules, proofing, fermentation, and product freshness.
  • Develop and maintain SOPs for bakery production and handling.

Product Development

  • Create and improve breads, viennoiserie, danishes, cakes, and seasonal products.
  • Innovate new menu items aligned with market trends and brand direction.
  • Conduct product testing, costing, and standardization.

Team Management

  • Lead, train, and supervise bakery staff and bakers.
  • Schedule manpower efficiently and monitor staff performance.
  • Conduct training on techniques, hygiene, and product standards.
  • Foster teamwork, discipline, and positive kitchen culture.

Quality Control & Food Safety

  • Ensure all products meet company quality standards.
  • Maintain HACCP, food safety, cleanliness, and hygiene standards.
  • Monitor stock rotation, expiry dates, and proper storage practices.
  • Work closely with QAQC and management during audits and inspections.

Inventory & Cost Control

  • Monitor ingredient usage, wastage, and bakery food cost.
  • Assist in purchasing and supplier coordination.
  • Conduct stock checks and ensure proper inventory management.
  • Maintain equipment and report maintenance issues promptly.

Coordination & Communication

  • Work closely with the central kitchen, retail outlets, and management teams.
  • Coordinate production for events, catering, and festive seasons.

Requirements

  • Minimum 5–8 years of experience in bakery production.
  • At least 2 years in a leadership or supervisory role.
  • Strong knowledge in artisan bread, sourdough, viennoiserie, and Danish production.
  • Experience in a high-volume production kitchen is an advantage.
  • Good leadership, communication, and organizational skills.
  • Ability to work under pressure and meet deadlines.
  • Knowledge of food safety and hygiene standards.

Preferred Skills

  • Experience with central kitchen operations.
  • Strong understanding of costing and production efficiency.
  • Creative and trend-aware in bakery innovation.
  • Experience in staff training and SOP development.

Working Conditions

  • Able to work early mornings, weekends, and public holidays when required.
  • Comfortable working in fast-paced kitchen environments.

Pay: RM6,500.00 - RM10,000.00 per month
